Dessert: Umm not sure what to call this yet. It is my little creation of crossing a Japanese Cheesecake recipe with a Strawberry shortcake. The result was delicious. Light, yet creamy and oh so refreshing. The entire cake uses 1/3 the cream cheese of traditional cheesecake and only 3 eggs and 3 tablespoons of sugar. But it taste every bit as decadent. Hmm I have feeling that this may be my go to cake for the summer.
